Canned beans are more affordable and save prep time.
Melt some butter in the cooking pot.
Add chopped scallion, Scotch bonnet pepper, mixed vegetables, and minced garlic to the pot and combine.
Boil the saltfish three times to remove excess salt, then debone it.
Add the deboned saltfish to the pot and combine with the other ingredients.
Add paprika and black pepper to the mixture and combine well.
Add water and coconut milk powder to the pot; if using authentic coconut milk, add that instead of water.
Allow the mixture to come to a boil before adding the rice.
Add white rice to the pot and combine it with the other ingredients.
Turn the stove to medium heat and allow the mixture to come to a boil.
Once most of the water is boiled out, reduce the heat to low.
Cover the pot with foil paper and pour some water over the foil to steam the rice.
Once the rice is finished cooking, fluff it up in the pot and serve.
Serve the rice and place the Scotch bonnet pepper to the side to avoid it bursting.
