Rinse the tomatoes and lemon thoroughly in clean water two or three times to remove baking soda.

Blanch the cherry tomatoes in boiling water with 1/2 tablespoon of salt for 1 minute 30 seconds to 2 minutes until the skin splits.

Peel the blanched tomatoes individually to remove the skin.

Use 2 slices of lemon; if unavailable, substitute with 1/2 teaspoon of lemon juice.

In a sterilized container, place the peeled tomatoes and pour in the plum syrup until the tomatoes are submerged.

Add a pinch of salt and the lemon slices, then refrigerate for 1-3 days to allow the flavors to meld.
