Turn on the burner and add grape seed oil to the pot.
Add the beef and pork mixture to the pot and season with salt and black pepper.
Sear the meat until browned, about 5-7 minutes.
Remove the browned meat and set it aside.
Add diced smoked bacon to the pot and cook until it starts to render fat.
Add diced onions to the pot and cook until they are translucent, about 5 minutes.
Add sliced baby portabella mushrooms and reconstituted wild mushrooms to the pot.
Add the garlic and cook for an additional 2-3 minutes.
Return the browned meat to the pot and stir to combine all ingredients.
