Preheat the oven to 400°F (200°C).
Butter one side of each slice of bread.
Spread mustard on the unbuttered side of each slice of bread.
Layer ham and gruyère cheese on top of the mustard on one slice of bread.

Heat a skillet over medium heat and grill the sandwich until golden brown, about 3-4 minutes per side.
Transfer the sandwich to a baking sheet and bake for 5 minutes until the cheese is melted.
In a separate pan, fry an egg to your desired doneness.
Remove the sandwich from the oven and place the fried egg on top.
Serve immediately, garnished with additional cheese if desired.
