Alternative Christmas Pudding

Cultural Context

Alternative Christmas Pudding is a modern twist on the traditional British dessert, often served during the festive season. While the classic version is rich with suet and often contains alcohol, this alternative offers a lighter, fruit-filled option that still embodies the spirit of celebration. It's become popular in various households, adapting to dietary preferences while retaining the festive flavors associated with Christmas.

1

Cream together the brown sugar and butter until combined.

2

Beat in the first egg, mixing well, then add the second egg and mix again.

3

Add all the dried fruits and orange juice to the mixture and mix together with a spoon.

4

Sift in the plain flour, ginger powder, and baking soda, then mix until combined.

5

Add the breadcrumbs to the mixture and stir until well incorporated.

6

Spoon the mixture into a two-pint Pyrex bowl, pressing it down firmly with a spoon and smoothing the top.

7

Cover the top with a piece of greaseproof paper, then place a piece of aluminum foil over it with a 'Z' fold to allow for expansion.

8

Seal the foil with two or three elastic bands and trim off any excess foil.

9

Place the bowl in a large pan of boiling water, ensuring the water comes about 2/3 of the way up the side of the bowl.

10

Cover the pan with a lid, turn the heat down, and let it simmer gently for 6 hours, topping up the water as necessary.

11

After 6 hours, remove the bowl from the water and take off the elastic bands and foil, then peel off the greaseproof paper.

12

Run a spatula around the edge of the bowl to loosen the pudding, then invert a plate over the bowl and flip the pudding out onto the plate.
