Trying Exotic Possum Meat in Grenada!!

Catch the possum (maniku) and prepare it by removing the head and cleaning it.

Remove the fat and glands from the possum, keeping the rest of the body.

Chop the possum into smaller pieces, discarding the head and any unwanted parts.

Season the chopped possum with culantro and brown sugar.

Add curry powder to the pot and mix it with the brown sugar until it thickens.

Add coconut powder to the mixture and stir until it becomes thick.

Pour in boiling water to the pot and mix well with the seasoned meat.

Add tomato paste and more warm water to the pot, ensuring all flavors are incorporated.

Cover the pot and let it simmer for 20 minutes.

Prepare dough for baking and place it in a small pan with butter before putting it in the oven.

After 20 minutes, check the possum stew, ensuring it has thickened and the flavors have melded together.
