1/2 cup Oil
1 cup Apple Cider Vinegar
2 Tbs. Salt
3 Jalapenos (seeds removed)
2 Bay leaves
1/2 bunch Fresh thyme

Start off by boiling the cauliflower florets and sliced carrots in some salted water.

In a separate pan add 1/2 cup of oil and on a low heat fry up the onion, jalapeños and cabbage until they're cooked down.

Add the salt, pepper, bay leaves and thyme and all the drained cauliflower and carrots.

Mix everything together and continue to fry for 5 more minutes then add 1 cup of apple cider vinegar and 1/2 cup of water.

Coat all the veggies in the vinegar and taste some to make sure it has enough salt.

Remove everything from the heat and once all the veggies have cooled, store this tightly sealed in the refrigerator for up to two weeks.
