Preheat the oven to 350°F (175°C).
In a medium bowl, whisk together 2 1/2 cups of all-purpose flour, 2 cups of white sugar, 1/2 tablespoon of unsweetened cocoa powder, 1 teaspoon of baking soda, and 1 teaspoon of table salt.
In a large bowl, mix 2 extra large eggs, 1 cup of canola oil, 1 cup of buttermilk, 1 teaspoon of pure vanilla extract, 1 teaspoon of distilled white vinegar, 1/3 cup of full fat sour cream, and 1/4 cup of hot coffee until well combined.
Add 1 fluid ounce of red food coloring and whisk everything together until combined.
Gradually add the dry ingredients to the wet ingredients and mix until well incorporated, being careful not to over mix.
Pour the batter into three 9-inch round cake pans that have been sprayed with baking spray and flour.
Bake for 30 minutes or until a toothpick inserted comes out clean.
Let the cakes rest in the pans for about 20 minutes before removing them to cool completely on wax paper.
In a stand mixer, combine 16 ounces of cream cheese and 1 cup of unsalted butter and cream on medium speed until fluffy.
Add 4 1/2 cups of powdered sugar and a pinch of salt to the cream cheese and butter mixture and mix until well blended.
Place one cake layer on a cake stand, dollop some frosting on top, and spread it evenly.
Add the second layer and repeat the frosting process, then add the final layer and frost the top and sides of the cake.
Sprinkle cake crumbs and chopped pecans on top of the frosted cake.
