1 tablespoon garlic powder
1 tablespoon brown sugar
2 teaspoons allspice
1-2 teaspoons Scotch bonnet pepper powder (can substitute cayenne pepper, optional: in addition 1/2 teaspoon red pepper flakes)
2 teaspoons coarsely ground black pepper
2 teaspoons kosher or sea salt
1 teaspoon paprika
1 teaspoon ginger
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves

Combine allspice, thyme, and cinnamon in a bowl.

Finely chop scotch bonnet peppers, garlic, and ginger.
