Peel and chop the pumpkin and have it ready to go.
Marinate shrimp in Caribbean roasted spice.
Heat a spoon of oil in a pot until hot.
Add jira, blended onion, garlic, and peppers to the pot and sauté until slightly brown.
Add about 1 teaspoon of salt and aji to the mixture and stir.
Generously add 3 tablespoons of brown sugar to the pot.
Cover the pot and allow the mixture to cook for about 15 minutes on low heat without adding water.
Check the pumpkin; it should be releasing its own water and starting to mash.
If the pumpkin does not release enough water, add 1 to 1.5 cups of water to the pot.
Stir the mixture and let it cook uncovered until most of the water evaporates.
Add chopped green onions to the pot and mix well.
Continue to cook until all water evaporates if a drier consistency is desired.
