3 large eggs

1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1/4 tsp nutmeg
1/2 tsp black pepper
1 tbsp olive oil
1/4 cup fresh basil, chopped

In a large bowl, mix the flour and salt together.

Make a well in the center of the flour and crack the eggs into the well.

Using a fork, beat the eggs gently, then gradually incorporate the flour until a dough forms.

Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

Wrap the dough in plastic wrap and let it rest for 30 minutes.

In a separate bowl, combine the ricotta, Parmesan, nutmeg, black pepper, and chopped basil to make the filling.

Roll out the dough into thin sheets using a pasta machine or a rolling pin.

Cut the dough into squares (about 3 inches each).

Place a small spoonful of filling in the center of each square.

Fold the square over to form a triangle, pressing the edges to seal, then bring the two corners together to form a tortelloni shape.
