Chop the cabbage finely, discarding the stem.
Place chopped cabbage in a pan without adding oil or water.
Add a little salt to help release moisture and cook covered for 4-5 minutes.
Once cooked, drain the cabbage in a strainer to remove excess water.
In the same pan, heat mustard oil and add nigella seeds and cumin seeds.
Add minced garlic and sauté for 1-1.5 minutes until fragrant.
Add sliced onion and sauté until translucent.
Mix in turmeric powder, Kashmiri chili powder, and coriander powder.
Add sliced tomatoes and salt, cooking until tomatoes soften.
Mash the cooked cabbage in a mixing bowl without adding water.
Combine the sautéed mixture with the mashed cabbage, mixing well.
Add crushed green chilies and garnish with fresh cilantro.
