Crack 4 large eggs into a large bowl.
Add 1 cup of granulated sugar and mix until light and creamy using an electric hand mixer or manual whisk.

Add 1/2 cup of sunflower oil and the zest of 1 lemon, mixing until combined.
Add 1 tablespoon of baking powder and whisk until well mixed.
Gradually add 1.5 cups of all-purpose flour in increments, running it through a fine sieve to remove clumps.
Mix until a thick and creamy batter forms.
Prepare an 8-inch round baking pan by lining it with parchment paper and spraying it with non-stick cooking spray.
Pour the batter into the prepared baking pan and spread it evenly.
Bake in a preheated oven at 180°C (355°F) for about 35 minutes, checking for doneness with a toothpick.
Remove from the oven and sprinkle the top with granulated sugar.
Let the cake cool at room temperature before serving.
