Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or grease it with non-stick spray.
In a large bowl, combine 2 1/2 cups white all-purpose flour, 2 1/2 teaspoons baking powder, 1/2 teaspoon salt, and 1 tablespoon granulated white sugar. Whisk together until fully incorporated.
Add 1/2 cup cold unsalted butter cut into small pieces to the flour mixture.
Use a pastry blender to cut the butter into the flour until it resembles coarse crumbs.
In a separate bowl, combine 3/4 cup 2% milk and 1 large beaten egg. Mix together.
Add the milk and egg mixture to the flour and butter mixture. Stir until just combined and all the flour is wet.
Lightly flour a surface and knead the dough a few times to bring it together. Pat the dough to about 1/2 inch thick.
Use a round cutter (about 2 1/2 inches) to cut out biscuits and place them on the baking sheet.
In a small dish, combine 1 large beaten egg and 1 tablespoon of milk. Brush the tops of the biscuits with this mixture.
Bake in the preheated oven for 10 to 15 minutes or until a toothpick inserted comes out clean.
