Start by measuring out 2 heaping cups of self-rising flour.
Add a dash of baking soda (about 1/4 teaspoon) and 2 teaspoons of sugar to the flour and mix with a Dutch whisk.
Grease a cast iron griddle with butter flavored Crisco.
Add 2 tablespoons of butter flavored Crisco to the flour mixture and mix it in.
Pour in about 1 cup of buttermilk and mix until the dough starts to come together.
If the dough is too thick, adjust with more buttermilk as needed until it sticks together.
Flour your work surface and turn the dough out onto it, adding a bit more flour if necessary to prevent sticking.
Knead the dough gently by folding it over a few times, being careful not to overwork it.
Flatten the dough to about 1/2 inch thickness.
Use a biscuit cutter to cut out biscuits, pressing straight down without twisting the cutter to ensure they rise properly.
Gather the scraps, mix them together gently, and cut out additional biscuits.
Preheat the oven to 450°F and place the biscuits on the greased griddle.
Bake the biscuits in the oven until golden brown.
