3 cups basmati rice (soaked for 30 minutes)
5-6 cups chicken broth
1/4 cup saffron water
1/4 cup nuts
1 teaspoon sugar
1 tablespoon tomato paste
1/2 cup water
1 tablespoon Kuwaiti spice mix

Heat 1/2 cup oil in a large pot.

Stir in 1 tablespoon ginger paste and 1 tablespoon garlic paste, frying for 2 minutes.

Add 8 cardamom pods, 4 bay leaves, 10 cloves, 15 black peppercorns, 2 dried lemons, and 2 pieces of cinnamon.

Add 1 whole chicken (1000 grams) and salt to taste, browning until golden.

Pour in water and cover to steam the chicken.

Remove chicken and strain the broth, discarding the dried lemons and cinnamon.

Add 3 cups soaked basmati rice to the broth, then add 5-6 cups of chicken broth.

When most of the liquid is absorbed, the rice should be 90% cooked.

Soak saffron in 1/4 cup water and add half to the rice, reserving the rest.

Top with 1/4 cup nuts and cover for 30 minutes.

Add 1 tablespoon butter on top of the chicken and pour the remaining saffron water over it.

Cover the chicken with aluminum foil and bake until golden.

For the sauce (Daqoos), blend 4 medium tomatoes, 1 teaspoon sugar, and 1 tablespoon tomato paste with 1/2 cup water.

In 1/4 cup oil, sauté 1 teaspoon garlic until light golden, then add tomato puree and 1 tablespoon Kuwaiti spice mix.

Add salt and a chicken cube, and let it cook.
