½ pound canned tuna (225 g)
1 egg
1 Tbsp lemon zest
¼ cup Parmesan cheese (about 25 g)

a pinch of dried oregano
¼ cup almond flour (25 g)
bunch of green onions
bunch of fresh parsley
1 Tbsp lemon juice (15 ml)
4 Tbsp Greek yogurt (60 g)
1 clove of garlic
2 eggs
1 pack of dry farmer’s cheese (200 g)
½ cup grated hard cheese (50 g)
5 slices of ham (about 50 g)
1 tbsp psyllium husk (8 g)

Add ½ pound canned tuna to a bowl — for me, that’s 4 small cans, drained.

Crack in 1 egg.

Grate about 1 Tbsp lemon zest directly into the bowl.

Grate ¼ cup Parmesan cheese on a fine grater and add it to the bowl.

Add a pinch of black pepper, a pinch of salt, and a pinch of dried oregano.

Add ¼ cup almond flour and mix everything very well.

Finely chop a bunch of green onions and add them to the mixture.

Finely chop a bunch of fresh parsley and add it in as well.

Squeeze in 1 Tbsp lemon juice and mix everything again until well combined.

Line a board with parchment paper and lightly spray it with olive oil.

Divide the mixture into 7 equal parts and form the fritters with your hands, placing them on the parchment.

Heat a pan and spray it with olive oil.

Place the tuna fritters in the pan, cooking them all in one pan.

Flip carefully using a silicone spatula — they’re very delicate.

Cook over medium-high heat for about 3 minutes per side.

At the end, flip them one more time and cook for 1 extra minute so they set well and get a beautiful crust.

To make the yogurt aioli sauce, add a pinch of salt to a bowl.

Grate 1 clove of garlic and add it to the bowl.

Add 1 Tbsp lemon juice and 4 Tbsp Greek yogurt, then mix well.
