3 ripe plantains
1 large onion
1 red pepper
1 cup king oyster mushrooms
1 can beans (cooked)
1 package Beyond Meat sausage (patties)
1/4 cup manzanita olives
vegetable broth

Peel the plantains by making a slit down the side and removing the skin.

Preheat the air fryer to 400 degrees.

Place the peeled plantains in the air fryer and cook at 400 degrees.

Chop the onion and king oyster mushrooms.

In a pan, add the chopped onions and mushrooms and stir them together without oil.

Add a splash of vegetable broth to help cook the onions and mushrooms down.

Cover the pan to let the onions and mushrooms release their water and soften.

Once the onions and mushrooms are softened, add the chopped red pepper and continue cooking.

Add spices: salt, pepper, garlic powder, adobo seasoning, cumin, and sazon seasoning to the mixture.

Add the cooked beans and manzanita olives to the pan and stir to combine.

Add the cooked Beyond Meat sausage to the mixture and stir well.

Check the consistency of the filling, ensuring it is moist but not too gravy-like.

Remove the cooked plantains from the air fryer.

Slice the plantains open about an inch deep, creating a canoe shape.
