Preheat oven to 425°F (218°C).
In a large bowl, whisk together flour, baking powder, baking soda, garlic powder, and salt.
Cut in the cubed butter until coarse crumbs form.
Fold in the shredded cheddar cheese. Make a well in the center and add 1 cup buttermilk and drizzle honey on top; fold until just combined.
Turn the dough onto a floured surface and bring together gently, flattening into a 3/4-inch-thick rectangle, folding several times.
Cut into 2.5- or 3-inch circles with a biscuit cutter and arrange in a cast iron skillet or on a baking sheet.
Brush the tops with remaining buttermilk and bake for 18–22 minutes until golden brown.
Brush the warm biscuits with melted butter and serve warm.
