Dice an onion.
Fine chop some parsley.
In a pan on medium heat, melt about 2 tablespoons of butter.
Add the diced onions to the pan and stir to coat in butter.
Add a pinch of salt and some black pepper to the onions and let them cook until they have a little bit of color.
Clear a landing spot in the pan and add a few cloves of minced garlic, cooking for about a minute until fragrant.
Add a little bit of thyme and sage to the onion mixture and stir, cooking for about a minute before removing from heat.
In a medium bowl, add 1 pound of Italian sausage, the chopped parsley, 1 teaspoon of Worcestershire sauce, a pinch of salt, some black pepper, and the onion mixture. Mix everything together.
Flour your surface and take out a sheet of puff pastry, using refrigerated if possible.
Crack an egg into a small bowl and whip it up to make an egg wash.
Cut the puff pastry in half lengthwise.
Spread a layer of Dijon mustard on the bottom half of the puff pastry.
Take half of the sausage mixture and roll it into a log, placing it over the mustard layer.
Brush the top of the sausage log with egg wash.
Roll the puff pastry over the sausage mixture, trimming excess pastry as needed.
Transfer to a sheet pan with a rack for airflow underneath.
Repeat the process with the second half of the puff pastry.
Form the second log and place it next to the first on the rack, pinching the seams together to form a circle.
Make cuts in the pastry about every inch and a half, twisting each piece to expose the sausage filling.
Brush the entire wreath with egg wash and sprinkle with white and black sesame seeds.
Chill the wreath in the fridge for about 30 minutes before baking.
Preheat the oven to 400°F.
Bake the wreath in the oven for about 45 minutes until the puff pastry is puffed and golden brown and the sausage is cooked.
Let the wreath cool for a few minutes before serving with a dipping sauce.
