Roll out the Lebkuchen dough to about 5 mm thick.
Combine the dough into a ball to prevent it from spreading during baking.
Cut out reindeer shapes using a Lebkuchen cookie cutter.
Place the cut-out shapes directly onto a baking sheet.
Mix a little milk with water and brush a thin layer over the cookies to make them shiny.
Preheat the oven to 180°C (356°F) and bake the cookies for 10-12 minutes.
Prepare a glaze by boiling 50 grams of gum arabic with an equal part of water.
Brush the hot cookies with the glaze to give them a nice shine.
Let the cookies cool before decorating.
Whip 30 grams of egg white with 150 grams of powdered sugar for 5 minutes to make the icing.
Color the icing with brown, white, green, and black food coloring as needed.
Fill a piping bag with the icing and decorate the cookies, starting with the faces and antlers.
Use red fondant to create noses for the reindeer.
Add eyes using white icing and additional details with brown icing.
