Prosciutto is leaner while serrano ham is more affordable.

Season the filet mignon with salt and black pepper on both sides.

Heat olive oil in a skillet over medium-high heat until shimmering.

Add the filet mignon to the skillet and sear for 3-4 minutes on each side for medium-rare.

In the last minute of cooking, add butter, garlic, and rosemary to the skillet.

Baste the filet with the melted butter and herbs for enhanced flavor.

Remove the filet mignon from the skillet and let it rest for 5 minutes.

In the same skillet, quickly warm the jamón ibérico until just slightly crispy, about 1-2 minutes.

Slice the filet mignon and arrange it on a plate.

Top with the warm jamón ibérico slices.

Drizzle with fresh lemon juice and garnish with chopped parsley.

Serve immediately with your choice of sides.
