Preheat the grill to 275-300°F.
Score the bologna all the way around, about half an inch apart.
Coat the bologna with yellow mustard liberally.
Sprinkle barbecue seasoning and cajun seasoning on the bologna.
Place the bologna on the grill and smoke for about 2 hours without moving it.
After 2 hours, remove the bologna from the grill and let it rest.
Cook thick cut bacon on the flat top until crispy.
Butter some slices of bread for toasting.
Fry the thick slices of bologna on both sides on the flat top until caramelized.
Spread mayonnaise on both sides of the toasted bread.
Layer the fried bologna on one slice of bread.
Add a generous amount of bacon on top of the bologna.
Place a slice of cheese on top of the bacon.
Top with lettuce and tomatoes.
Close the sandwich with the other slice of bread and serve.
