Prepare the flour mix by adding 25 ml of water to the tapioca flour and mix until well combined; set aside.

Switch on the heat to medium and pour in all the garlic oil into the pan, allowing it to get hot for about 1 minute.

Add the carrots, wood ear mushrooms, and sweet peas to the hot oil and stir to coat the vegetables with garlic oil for about 20 seconds.

Add the rest of the water and stir briefly to evenly distribute it; cover the pan and let it simmer for 4 minutes.

After 4 minutes, add the yellow onions, cauliflower, sesame oil, light soy sauce, oyster sauce, and half of the crispy fried garlic; stir until well combined for about 20 seconds.

Add the tomato wedges and stir to mix everything; cover the pan and continue to simmer for another 2 minutes.

After 2 minutes, open the lid and stir to mix well; pour in the flour mix and give it a quick stir to thicken the gravy.

Mix in the rest of the crispy fried garlic into the dish and switch off the heat; serve immediately.
