1

Peel the plantains by cutting the tips and making two slits, then soak in cold water to help remove the skin.

2

Boil the water in a pot and add 1 tablespoon of butter and salt.

3

Cut the plantains into small pieces and add them to the boiling water.

4

Boil the plantains for 20 to 30 minutes until very soft.

5

After 15 minutes, check the plantains; they should be getting soft. Let them boil for another 5 minutes.

6

Once the plantains are soft, remove them from the pot and place them in a bowl for mashing.

7

Add a little bit of the boiling water, a tablespoon of butter, and some milk to the plantains.

8

Mash the plantains using a masher, adding more hot water as needed to achieve desired creaminess.

9

Taste the mangu while mashing to check if it needs more salt.

10

Serve the mangu topped with fried eggs and optionally some fruit on the side.
