Peel, wash, and pat dry 2 medium-sized sweet potatoes, then cut them into small bite-sized cubes.

After 4 to 5 minutes, when the onions are slightly translucent, add the chopped sweet potatoes to the fry pan and mix them around to coat in olive oil, stirring every 1 to 2 minutes.

After 8 to 10 minutes, when the sweet potatoes are lightly golden fried, add 1 teaspoon of sweet smoked paprika (2.5 grams) and 1 teaspoon of dried oregano (1.25 grams) to the pan and mix well.

Add 1 cup of tomato sauce (240 grams) to the pan, season generously with sea salt and freshly cracked black pepper, and mix until well combined.

Cover the pan with a lid, lower the heat to low medium, and simmer for 5 to 10 minutes or until the sweet potatoes are just cooked through, checking with a toothpick if necessary.

Once the sweet potatoes are cooked, crack eggs into individual bowls to avoid shells and broken yolks, then create little pockets in the sweet potato mixture and add the eggs.

Season the eggs with a kiss of sea salt and freshly cracked black pepper, cover the pan again, and simmer for another 4 to 5 minutes until the egg whites are set but yolks are still slightly creamy.
