Beef Pot Pie

2 packs beef short ribs
1 quart beef stock
2 carrots
1 medium onion
1/2 cup butter
1/2 cup flour
1/2 teaspoon thyme
frozen carrots and peas

Preheat the oven to 400°F.

Slow roast beef short ribs in the oven for about 4 hours until falling apart.

Shred the cooked beef short ribs into bite-sized pieces.

In a Dutch oven, melt 1 stick of butter.

Sauté 1 medium chopped onion in the butter until translucent.

Add parboiled diced potatoes to the sautéed onion.

Add 1/2 cup of flour to the mixture to make a roux.

Add 1 quart of beef stock and stir until combined.
