6 oz Craft Deli Deluxe American cheese (about 8 slices)

1 tbsp all-purpose flour
1 cup whole milk
0.5 tsp ground white pepper
0.5 tsp ground yellow mustard
regular cut frozen french fries
canola oil (for frying)

Melt 2 oz of unsalted butter in a very hot skillet.

Add 1 medium sweet onion, finely chopped, along with a pinch of kosher salt and a touch of cracked black pepper.

Saute the onions until they become a deep golden brown color, stirring frequently for about 15 minutes.

In a bowl, combine 1 cup of mayonnaise, 6 tbsp of ketchup, 4 tbsp of sweet pickle relish, 2 tsp of distilled white vinegar, 2 tsp of yellow mustard, and a pinch of kosher salt. Blend all the ingredients together thoroughly and refrigerate until use.

Cut 6 oz of Craft Deli Deluxe American cheese into chunks.

In a saucepan over medium-high heat, melt 1.5 tbsp of unsalted butter.

Whisk in 1 tbsp of all-purpose flour to form a roux.

Add 1 cup of whole milk and whisk together quickly to remove clumps and to thicken.

Add the chopped American cheese to the saucepan and whisk constantly until the cheese is completely melted. Add 0.5 tsp of ground white pepper and 0.5 tsp of ground yellow mustard.

Heat about 2 inches of canola oil in a deep fryer or large pot until it reaches 375°F.

Carefully drop frozen french fries into the fry oil in small batches, frying for 5 to 6 minutes until golden brown and crispy.

Remove the fries from the oil and place them on a drainer rack. Repeat the frying process until all fries are cooked.

Place the fries on a parchment-lined sheet tray and sprinkle generously with kosher salt.

Top the fries with the American cheese sauce, caramelized onions, and the animal sauce.
