Unsweetened Applesauce

2 kilograms apples (about 4.5 pounds, 10 medium to large apples)
1/4 cup water (about 60 ml)
2 tablespoons lemon juice (about 27 ml)

Peel, core, and cube the apples.

Add 1/4 cup of water and 2 tablespoons of lemon juice to the apples in a pot.

Stir the mixture and turn the burner on high to bring it to a boil.

Once the liquid is boiling, cover the pot and reduce the heat to very low to simmer for about 25 minutes.

Check the apples after 25 minutes; if using a firmer apple, like Scotian Gold, it may take up to 1 hour to become soft.

Test the apples by trying to mash them with a fork; they should be soft enough to mash easily.

Mash the apples to your desired consistency.

Store the applesauce in the fridge for about a week or freeze it once cooled.
