1

Peel 4 potatoes and cut them into thick fry shapes.

2

Soak the cut potatoes in water for about 10 minutes to remove excess starch.

3

Drain the potatoes and place them in another bowl.

4

Add hot water to the potatoes and let them sit for about 30 minutes to soften them.

5

Drain the potatoes and pat them dry with a kitchen towel.

6

Place the dried potatoes in a Ziploc bag or bowl and add 1 tablespoon of cornstarch, coating the potatoes evenly.

7

Heat vegetable oil in a pan over medium heat.

8

Test if the oil is ready by inserting a wooden stick; if bubbles form, the oil is ready.

9

Slowly drop the coated potato pieces into the hot oil and fry for about 5 minutes for the first fry.

10

Remove the fries from the oil and set them aside on a kitchen towel.

11

Place the fries in the freezer for about 30 minutes.

12

While the fries are freezing, prepare the sauce by mixing 2 tablespoons of mayonnaise, 1 tablespoon of hot and sweet sauce, 1 tablespoon of ketchup, and 1 tablespoon of yellow mustard until well combined.

13

After 30 minutes, fry the potatoes again for about 5 to 8 minutes or until crispy and golden brown.

14

Remove the fries from the oil and place them on a kitchen towel to drain excess oil.

15

Serve the fries with the prepared sauce.
