Add 300 g of plain flour to a bowl.

Add a pinch of salt and 80 g of unsalted butter to the flour.

Use a fork and spoon to work the butter into the flour until it resembles breadcrumbs.

Add 2 teaspoons of sugar and 2 teaspoons of baking powder to the mixture and mix well.

Add the mixed fruit to the bowl.

Beat one egg and pour most of it into the bowl, saving a bit for brushing later.

Add 100 ml of milk in two or three batches, stirring gently after each addition.

Gently fold the dough with your hands until combined, without kneading it.

Turn the dough out onto a large plate and flatten it to about 2 cm thick.

Line a baking tray with baking paper.

Use a cookie cutter about 2 inches in diameter to cut out the scones.

Place the cut scones on the tray and press together any leftover dough to cut more scones.

Brush the tops of the scones with the reserved egg for a golden color.

Preheat the oven to 180° C.

Bake the scones for 15 minutes, rotating the tray halfway through.

After 15 minutes, if the tops aren't golden, increase the oven temperature to 200° C for a couple more minutes.
