Start by making the sauce: mix 50 ml of water with 1 tablespoon of oyster sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of light soy sauce, 1 tablespoon of fish sauce, and 1 tablespoon of sugar until the sugar is dissolved.

Crush 6 small garlic cloves and a mix of 3 bird's eye chilies and 1 large red chili using a pestle and mortar until chunky.

Separate the egg, keeping the yolk and the whites in separate bowls.

Heat vegetable oil in a wok or frying pan until hot, then add 250 grams of minced pork and cook until browned.

Push the pork to the side of the pan and add the garlic and chili mix, cooking slightly before mixing it with the pork.

Pour in the sauce mixture and cook for about 30 seconds before adding the basil, stirring to combine.

Remove from heat and prepare to cook the egg by heating more vegetable oil in a pan.

Add the egg whites to the hot oil and let them crisp for about 20 seconds before gently placing the yolk on top and cooking for another 30 seconds until set.

Serve the pad kra pow with jasmine rice and the fried egg on top.
