Chickpea flour is gluten-free and adds protein.
Start with 2 cups of all-purpose flour on a clean countertop, forming a well in the center.
Crack 2 eggs into the well of flour.
Whisk the eggs in the well, then add about 1 tablespoon of olive oil and a little bit of salt.
Gradually work in the flour from the inside of the well until the mixture becomes a firm dough.
Knead the dough with one hand for about 10 minutes until smooth and elastic, incorporating all the flour.
Let the dough rest for about 5 to 10 minutes to relax.
Cut the dough into 8 pieces for easier handling.
Flatten one piece of dough to about a quarter to an eighth inch thick before passing it through a pasta machine.
Start with the widest setting on the pasta machine and gradually decrease the thickness until the pasta is thin enough to see your finger shadows through it.
Let the pasta sheets dry for about 15-20 minutes to prevent sticking.
Cut the sheets into strands using the pasta machine's cutting attachment or by hand.
If cutting by hand, roll the sheet loosely and cut with a knife.
Bring a pot of water to a boil and heavily salt it before adding the pasta.
Cook the pasta for a couple of minutes until it floats to the top, stirring frequently to prevent sticking.
