Sift together 2 cups of all-purpose flour, 1 tablespoon of sugar, and a pinch of salt.
Add 8 tablespoons of butter and crumble it into the flour mixture until it resembles a crumbly texture.
In a separate bowl, crack 1 egg, add 1 tablespoon of vinegar, and 1/3 cup of really cold water, then mix.
Combine the wet mixture with the dry mixture, folding it together until a dough forms.
Wrap the dough in cling wrap and chill in the fridge for about 30 minutes.
Slice a thick slab of pre-cooked cottage roll (ham) and cube it.
Grate your favorite cheese, using about a cup, and add it to the bowl with the cubed ham.
Add 1 cup of drained pineapple tidbits to the ham and cheese mixture.
Prepare an egg wash by mixing 1 egg with 1 tablespoon of milk.
Remove the chilled dough from the fridge and place it on a floured surface, dividing it into six pieces.
Roll each piece into a ball and then roll it out to about a quarter of an inch thick.
Cut out circles using a template or bowl.
Place some of the ham, cheese, and pineapple filling in the center of each circle.
Fold the dough over the filling, pinch to seal, and crimp the edges with a fork.
Place the empanadas on a sheet pan and brush the tops with the egg wash.
Bake in a preheated oven at 375°F for about 35 to 40 minutes.
