Baked Avocado Eggs

2 ripe avocados
4 large eggs
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp paprika
1/4 cup shredded cheese (optional)
Fresh herbs for garnish (e.g., chives or parsley)

Preheat your oven to 425°F (220°C).

Cut the avocados in half and remove the pit.

Scoop out a little extra flesh from the center of each avocado half to create enough space for the egg.

Place the avocado halves in a baking dish, cut side up.

Crack an egg into each avocado half, being careful not to break the yolk.

Sprinkle salt, black pepper, and paprika over the eggs and avocados.

If using, sprinkle shredded cheese on top of the eggs.

Carefully place the baking dish in the oven and bake for about 15-20 minutes, or until the egg whites are set but the yolks are still runny (or to your desired doneness).

Remove from the oven and let cool for a minute.
