Roasted Pork Loin with Yukon Gold Potatoes

Preheat the oven to 425°F.
Tie the boneless pork loin together with dental floss or butcher's twine to keep it intact while baking.
Massage the pork loin with 1 tablespoon of olive oil to help the salt and pepper adhere.
Generously season the pork loin with 1 tablespoon of salt and 2 teaspoons of fresh cracked pepper.
Using a paring knife, make holes in the pork loin and insert garlic cloves (optional) for flavor.
Bake the pork loin in the preheated oven for 30 minutes per pound; for a 3 and 1/2 lb pork loin, bake for approximately 1 hour and 45 minutes.
After the first hour of baking, prepare the Yukon Gold potatoes by cutting them in half and placing them in a large bowl.
Add 1 tablespoon of olive oil, a pinch of kosher salt, and a little fresh cracked pepper to the potatoes and toss until coated.
Add the potatoes around the pork loin in the roasting pan and return it to the oven for an additional 35 to 40 minutes.
Check the doneness of the potatoes by inserting a knife; it should slide off easily when done.
Let the pork loin rest for about 10 minutes before cutting into it and remove the dental floss before serving.
