Preheat the oven to 375°F (190°C).

Pour chicken broth into the bottom of the pan.
Roast in the preheated oven for 1 hour or until the internal temperature reaches 145°F (63°C).
Baste the pork with pan juices every 20 minutes for even cooking.
Remove the pork from the oven and tent loosely with foil; let it rest for 10-15 minutes.
Meanwhile, deglaze the roasting pan with red wine, scraping up any browned bits.
Stir in mustard and honey to create a sauce; simmer until slightly thickened.
Slice the pork loin against the grain and serve with the roasted vegetables and sauce.
