1

Wash the russet potatoes thoroughly.

2

In a big bowl, add 4 cups of warm water and a whole bunch of salt, then whisk until the salt dissolves.

3

Place the potatoes in the salty water for a quick bath, spinning them around to coat.

4

Put the potatoes on a rack.

5

Using a sharp knife, poke a couple of holes in each potato.

6

Preheat the oven to 450°F (232°C).

7

Bake the potatoes for about 40-45 minutes or until they reach an internal temperature of 205°F (96°C).

8

Remove the potatoes from the oven and coat them with neutral oil (sunflower or vegetable oil) to ensure the skin is crispy.

9

Return the potatoes to the oven for another 10 minutes.

10

Once done, place the potatoes on a cutting board and slice the top in a tight X shape.

11

Use paper towels to gently push the sides of the potato to open it up.

12

Add two pads of butter to the inside of each potato.

13

Top with shredded cheddar cheese, then add sour cream, bacon bits, and chives.
