Dice the potatoes or slice them thin, depending on preference.
Heat olive oil in a pan until hot.
Add the smoked sausage to the pan and cook until browned on all sides.
Remove the sausage from the pan and set aside.
Melt butter in the same pan, then add onions and chopped garlic, sautéing for 5 minutes until softened.
Add heavy whipping cream, milk, onion powder, garlic powder, black pepper, and seasoned salt to the pan, mixing well and bringing to a light simmer.
Once simmering, turn off the heat and mix in parmesan cheese and half of the cheddar and mozzarella cheese until melted.
Prepare a greased baking dish and layer half of the diced potatoes at the bottom without overlapping too much.
Layer half of the cooked sausage on top of the potatoes.
Pour half of the cheese sauce over the sausage and potatoes.
Repeat the layering with the remaining potatoes, sausage, and cheese sauce, finishing with the remaining cheddar and mozzarella cheese on top.
Cover the baking dish tightly with greased aluminum foil.
Preheat the oven to 375°F.
Bake the casserole for 40 to 45 minutes covered with foil.
After 40 minutes, remove the foil and bake for an additional 15 minutes.
After 15 minutes, remove from the oven and let the casserole rest for 10 minutes before serving.
Garnish with fresh parsley before serving.
