Preheat the oven to 375°F (190°C).

Grease an 8x8 pan with olive oil.

Chop the onion and add it to a skillet over medium heat.

Add spinach and 1/4 teaspoon of salt to the skillet with the onion and cook until the onions are soft and the spinach has released its liquid.

In a mixing bowl, combine 1 and 1/2 cups of milk, 1 cup of cottage cheese, 2 eggs, and 1/2 teaspoon of salt; blend until smooth.

Once the spinach mixture has cooled, add 2/3 of the feta cheese and stir together.

Layer 2 matzoh at the bottom of the greased pan.

Add half of the spinach mixture on top of the matzoh.

Place another 2 matzoh on top of the spinach mixture.

Add the remaining spinach mixture on top of the second layer of matzoh.

Place the last 2 matzoh on top.

Pour the milk mixture over the top, allowing it to seep in; jiggle the pan if necessary.

Sprinkle the remaining feta cheese on top.

Cover the pan with aluminum foil and bake for 30 minutes.

Remove the foil and bake for an additional 15-20 minutes until browned on the edges.

Allow to cool for 15 minutes before cutting into squares.
