Add 3/4 cup of warm milk to a bowl and mix in 1 tablespoon of apple cider vinegar or white vinegar. Set aside for five minutes to curdle and form buttermilk.

In another bowl, combine 190 grams of all-purpose flour, 1 tablespoon of corn flour, 1 teaspoon of baking powder, and 1/4 teaspoon of baking soda. Mix well and set aside.

In a separate bowl, mix 15 grams of unsweetened cocoa powder with 45 ml of hot water until smooth and without lumps. Set aside.

Preheat the oven to 160-180°C (320-356°F) for 10 minutes.

In a mixing bowl, add 115 grams of unsalted room temperature butter and whisk it. Then add 150 grams of powdered or granulated sugar and 1/4 teaspoon of salt. Cream together until light and creamy, starting at a low speed and gradually increasing.

Add 1 teaspoon of banana extract to the butter and sugar mixture and mix well.

Gradually add the dry ingredients to the butter mixture, passing it through a sieve for even mixing. Alternate adding the dry ingredients and the prepared buttermilk until fully incorporated.

Transfer half of the batter to another bowl and mix in the prepared cocoa mixture gently until incorporated.

Line an 8 by 4 loaf pan with butter paper. Pour in the vanilla batter, then top with the chocolate batter. You can alternate the sequence of pouring if desired.
