Greek yogurt reduces calories while maintaining creaminess
Slice the onion into half rings and place in a bowl.
Add 1 teaspoon sugar, 0.5 teaspoons salt, 2 tablespoons 9% vinegar, and 0.5 cup water to the onion.
Mix and let the onion marinate.
Slice the smoked sausage into strips and place in a salad bowl.
Dice hard cheese into small pieces and add to the bowl with sausage.
Slice pickles into thin strips and add to the salad bowl.
Remove coarse stems from parsley and chop finely.
Drain the marinade from the onion and add the marinated onion to the salad bowl.
In a separate bowl, combine 2 tablespoons 20% sour cream, 2 tablespoons mayonnaise, and 0.5 teaspoons spicy mustard.
Mix well and pour the dressing over the salad ingredients, mixing gently.
Let the salad sit for 15 minutes before serving.
