Pick up beef short ribs from the local market, noting the two types available.
Trim some fat off the beef short ribs, leaving some for flavor.
Season the short ribs liberally with steak seasoning.
Coat the short ribs with avocado oil.
Heat a hot pan (cast iron or similar) and add a little oil if needed.
Place the short ribs meat side down in the hot pan, ensuring not to overcrowd it.
Sear the short ribs for about 2-3 minutes on each side until a nice color develops.
Add rosemary to the oil in the pan to infuse flavor.
Once seared, transfer the short ribs to a Dutch oven.
Add a little olive oil to the Dutch oven.
Prepare the mirepoix by adding onion, carrots, and substituting celery with red and sweet peppers.
