2 teaspoons thyme
1 teaspoon rosemary
1 tablespoon brown sugar
1/4 teaspoon cayenne pepper
2 tablespoons cornstarch

Season all sides of the short ribs generously with ground sea salt and freshly ground black pepper.

In a Dutch oven or baking pan over medium-high heat, add olive oil until hot.
