In a saucepan, pour 1 cup of water and add 125 g of butter.
Bring to a boil, then reduce the heat to low.
Add 1 cup of flour and mix immediately for 3 to 5 minutes until a smooth dough forms.
Let the dough cool completely to avoid scrambling the eggs when added.
Once cooled, add 3 eggs and mix until fully incorporated, using a mixer or silicone spatula.
Transfer the dough into a piping bag fitted with a 14 mm star tip.
Pipe the dough onto small squares of parchment paper, about 10x10 cm.
Heat oil to 180°C (350°F).
Place the parchment paper with the doughnut into the hot oil; the paper will detach and the doughnut will float.
Fry for about 8 to 10 minutes, flipping halfway through, until a deep golden brown.
Use wooden skewers or chopsticks to flip the doughnuts without damaging them.
Transfer the cooked doughnuts to a paper towel to absorb excess oil.
Dip the tops of the warm doughnuts into a smooth sugar glaze, letting the excess drip off.
