Instructions
- 1In a large pot, combine the purple corn and water. Bring to a boil and then simmer for about 30 minutes to extract the color and flavor from the corn.
- 2Strain the mixture to remove the corn, keeping the liquid in the pot.
- 3Add sugar, pineapple juice, apple juice, dried fruits, cinnamon, cloves, and salt to the pot. Stir well and bring to a boil again.
- 4In a small bowl, mix the cornstarch with a little cold water to create a slurry.
- 5Once the mixture is boiling, slowly add the cornstarch slurry while stirring continuously to avoid lumps.
- 6Reduce the heat and let it simmer for another 10-15 minutes until it thickens to a pudding-like consistency.
- 7Remove from heat and let it cool to room temperature.
- 8Once cooled, pour the mazamorra into serving dishes and refrigerate until set, about 2 hours.
- 9Serve chilled, optionally garnished with fresh fruits or a sprinkle of cinnamon.
