  • 2 cups purple corn
  • 8 cups water
  • 1 cup sugar
  • 1/2 cup pineapple juice
  • 1/2 cup apple juice
  • 1/2 cup dried fruits (like prunes and apricots)
  • 1/4 cup cornstarch
  • 1/4 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp salt

Instructions

  1. 1In a large pot, combine the purple corn and water. Bring to a boil and then simmer for about 30 minutes to extract the color and flavor from the corn.
  2. 2Strain the mixture to remove the corn, keeping the liquid in the pot.
  3. 3Add sugar, pineapple juice, apple juice, dried fruits, cinnamon, cloves, and salt to the pot. Stir well and bring to a boil again.
  4. 4In a small bowl, mix the cornstarch with a little cold water to create a slurry.
