Spread a layer of sauce on the bottom of the baking dish.
Layer fresh pasta sheets over the sauce, ensuring they cover the bottom.
Add a layer of fried eggplant on top of the pasta sheets.
Add a little more sauce over the eggplant layer.
Repeat the layering process until all ingredients are used, finishing with a layer of pasta sheets and sauce on top.
Sprinkle grated parmesan cheese and black pepper on top of the final layer.
Cover the lasagna and place it in the oven.
Bake at 425 degrees Fahrenheit for about two hours.
Let the lasagna rest for 20 minutes before serving.
