Add 2 cans of whole kernel corn (do not drain) to the crock-pot.

After 3 hours and 45 minutes, take the lid off the crock-pot and add about 2 heaping globs of sour cream, stirring it in.

While the chili is finishing, prepare the cornbread by mixing 2 Jiffy corn muffin mixes in a bowl.

Add 2 eggs (cracked in a separate bowl first) to the corn muffin mix.

Pour in 2/3 cup of milk into the corn muffin mix and whisk together.

Melt butter in a cast iron skillet and coat the bottom to create a buttery glaze.

Let the butter sit for about a minute and a half to crystallize.

Pour the cornbread batter into the skillet and spread it out evenly.

Cook the cornbread on the stovetop for a couple of minutes to get the bottom crispy before transferring it to the oven.

Bake the cornbread in the oven at 400°F for about 18 minutes.
