Melt plant-based butter or olive oil in a large pot or Dutch oven over medium heat.
Dice one large yellow onion and add it to the pot; cook for about 3 to 5 minutes until softened.
Add five minced garlic cloves and cook for an additional 30 seconds, stirring constantly.
Sprinkle in spices: black pepper, smoked paprika, thyme, garlic powder, and salt; stir for about 30 seconds to bloom the spices.
(Optional) Add all-purpose flour to make a roux, or use a slurry of cornstarch and water later if forgotten.
Pour in half a cup of dry white wine to deglaze the pot, scraping the bottom to lift brown bits.
Add diced golden potatoes, vegetable broth, plant milk, and coconut cream; stir well.
Simmer for about 15 minutes until potatoes are fork tender.
Transfer about half the soup into a high-speed blender and blend until smooth, or use an immersion blender directly in the pot.
Add about one cup of crispy tofu bacon to the soup.
Pour the blended soup back into the pot and simmer for an additional 10 minutes to infuse flavor.
Stir in plant-based sour cream and adjust seasoning with more salt or smoked paprika as desired.
