Remove maize from the cob using a paring knife.
Par boil maize in a pressure cooker with 2 cups of water for 5 minutes.
Chop potatoes into medium-sized cubes and wash them twice to remove excess starch.
In a pot, add 2 cups of water and salt, then add the chopped potatoes and boil until fork tender.
After 5 minutes, add green peas and salt to the pressure cooker and boil for 3 minutes (2 whistles).
Drain the water from the peas and maize after cooking.
Mash the peas and maize together using a potato masher.
Drain the boiled potatoes and let them sit for a minute to remove excess moisture.
Add salt and 1 tablespoon of cooking oil to the potatoes, then mash until smooth.
Combine the mashed potatoes with the mashed peas and maize, adding black pepper to taste.
Serve the mukimo on a plate.
